O is not always pronounced in a long sound as long as there is no vowel attached to it will always be pronounced as oh, on the other hand EO has the most confusing way of pronunciation compare to other vowel instead of sounding like the vowel E it somewhat sounds like short U sound. Last but not the least U is mostly pronounced like eww or oo. With practice and dedication in no time people could master Hangul.
